Shopping Essentials:

Ayran is a cold drink made with yoghurt often thinned with either milk or water and flavoured with salt. It is traditionally served with kebabs.

Baklava is a layered pastry dessert made of filo pastry, filled with chopped nuts, and sweetened with syrup or honey.

Biber Dövme is hot red pepper flakes.

Biber Salçasi is a red pepper paste that can be hot or mild

Borek is a thin flaky pastry filled with cheese & spinach rolled into a long sausage then arranged in a spiral and baked.

Cherry Jam imported from Turkey has chunks of cherries and is a wonderful addition to any sweets

Dövme Biber is semi-dried crushed chilli. Look for one that is slightly oily.

Lahmacun is a Turkish Pizza with a super thin, crispy base, topped with a spicy mixture of minced meat with peppers, tomato, fresh herbs and spices.

Manti are tiny dumplings that typically consist of a spiced meat mixture, usually lamb or ground beef, in a thin wrapper and either boiled or steamed.

Nar Ekşili is pomegranate molasses used for salad dressings and marinades it has a savoury, semi-sweet taste.

Nigella seeds are small black seeds also known as black cumin. Sprinkled over bread before baking.

Pastirma or basturma is a highly seasoned, air-dried cured beef that is part of the cuisine of Turkey

Pide is a flatbread often topped with sesame and nigella seeds. Traditionally only available during Ramadan. Eaten with most meals.

Pismaniye Persian cotton candy, fairy floss, that melts in your mouth.

Simit is a breakfast roll made in a ring shape and encrusted with sesame seeds.

Sucuk is a spicy sausage sometimes used to fill pide bread.

Sumac is a spice made from a berry with a tangy lemony flavour. Used in marinades and salads.

Turkish Delight is made with a wide variety of different flavours, like rosewater, pomegranate, vanilla.

Turkish tea is a popular hot drink. Widely drunk all through the day.

Tomato and capsicum paste is a key ingredient along with red pepper paste and is used to intensify the tomato flavour.

Yoghurt is used in dips, drinks, served with grilled meats and vegetable dishes and desserts.
