Maple Chai Seeded Cookies

It's a weekend tradition in our home to make a batch of cookies or healthy muffins for the week ahead. For lunch boxes, office snacks, or gifts to the neighbours, we always have a cookie jar filled with homemade sweet snack. And this week we were inspired by ChoosingChia.com with a batch of her healthy 'Breakfast Cookies. We swapped the cinnamon for homemade chai powder (see previous blog for recipe) and we are now set for the week!



Maple Chai Seeded Cookies

1 1/4 cup rolled oats

1/4 cup almond flour (can sub any type of flour)

1/2 cup raw sunflower seeds

1/4 cup pumpkin seeds

1/4 cup sliced almonds

1/4 cup sesame seeds

3 tbsp chia seeds

1/4 cup dried cranberries

dark chocolate chips

1 tsp chai powder

1/4 tsp salt

1/2 cup maple syrup

1/3 cup tahini or almond butter (I like to mix both)

1/2 tsp vanilla extract

1 egg (*or flax egg)

Preheat the oven to 180’C and line a baking tray with parchment paper. Mix all the dry ingredients together in a bowl.

Mix all the wet ingredients together in a separate bowl. Pour the dry ingredients into the wet and mix together until well combined.

Using wet hands, shape spoonfuls of dough evenly sized, and place onto the baking sheet. Press down with your wet hands (these cookies won’t spread)

Bake for 12 to 14 minutes. Let cool on tray before storing in an airtight container
