When the Covid-19 laws are relaxed and you can have A guest come to visit, it’s time to celebrate!

And nothing beats our favourite, traditional Baked Apple. This recipe has been in the family for generations and generations, dating back to Europe last century, where produce was limited and ingredients consisted of basic staples.

This was one of the very first recipes I recall baking on my own as a kid, and the perfect introduction for any young cook, and anyone who loves a simple, easy dessert.

Baked Apples

6 large apples

1 cup sultanas

1 cup brown sugar

125 gm butter

½ teaspoon cinnamon

3/4 cup boiling water

Preheat oven 180°C. Core the apple using a sharp paring knife or an apple corer. If using a paring knife, first cut out the stem area and then use a small metal spoon to scoop out the seeds. Score the skin of each apple with a sharp knife, approximately six times around the apple.

Place the apples in a baking dish, large enough to just hold all the apples. Stuff the centre of each apple with sultanas, then top with a teaspoon of brown sugar, a dollop of butter. Sprinkle remaining sultanas, brown sugar and butter in the baking dish, and sprinkle apples with cinnamon.

Pour the boiling water into the bottom of the baking dish. Bake for 30 to 45 minutes, until the apples are cooked through and very soft.

Remove the apples from the oven and baste them with the juices from the pan.

Serve with ice cream or vanilla cream.
